Ingredients

  • 1 cup avocados (diced)
  • 1 cup cucumbers (diced)
  • 1 cup tomato (diced)
  • ¼ cup red onion (thinly sliced)
  • 1 teaspoon dried parsley
  • ½ teaspoon salt
  • freshly ground black pepper (to taste)
  • 2 tablespoons olive oil
  • 1 lemon

Instructions

  • In a bowl, combine the cucumbers, avocados, tomatoes, and red onions.
  • Season with dried parsley, salt, and freshly ground black pepper.
  • Drizzle with olive oil, squeeze in the lemon juice, and mix well.
