Best Avocado Cucumber Salad Recipe

A scrumptious avocado cucumber salad with the crisp of cucumbers, creamy avocados and tangy tomatoes!

This avocado cucumber salad is very refreshing and perfect for a hot summer day. It is a delicious salad to enjoy as a BBQ side dish or appetizer. It is loaded with flavours and rich in healthy fats.

This avocado salad is an amazing addition to your menu that can be made ahead of time and is great for meal prep. It’s healthy, perfect for busy days, and makes a big enough batch that you can have some planned leftovers for work or school lunches. It makes a healthy low carb side dish and is incredibly easy to make in no time. Try this mouth-watering salad this weekend for your loved ones.

Can I make this salad ahead of time?

You can make this salad in advance. It will stay fresh in refrigerator in a sealed container up to 2 days.

What can I serve this salad with?

  • This salad goes well with almost every dish.
  • It would make a great side dish with grilled chicken or fish.
  • You can also take it as a light lunch or dinner.

  • Choose ripe avocados for this salad.
  • The pepper can also be adjusted to your preference.
  • You can also add boiled chicken and pasta to this salad to make it a perfect and filling meal.
Squeeze Lemon for Avocado Salad
Microwave the lemons to extract more juice out of them

Tip for extracting more juice out of the lemons:

  • Before cutting the lemon, microwave it for 25 – 30 seconds. Once it has cooled, cut it and juice as normal. It will require minimum efforts and more juices will be extracted. Believe me microwaving the citrus fruits is a game changer.

Tips for choosing perfectly ripe and creamy avocado:

  • Gently squeeze the avocado using the palm of your hand. If avocado is very firm, it is underripe (will take 3 to 4 days to fully ripe). If it gives slightly, it is ripe and ready to consume. And if it feels soft and mushy, it’s overripe, so it is best to avoid it
  • Another tip is to peel back the small stem off the avocado, if you can see green underneath, the avocado is ripe. If it does not come off easily, the avocado is not ripe yet and if you see brown or blackish underneath, it is overripe.

Ingredients

  • Avocados (diced) – 1 cup
  • Cucumbers (diced) – 1 cup
  • Tomatoes (diced) – 1 cup
  • Red Onions (sliced) – ¼ cup
  • Dried Parsley – 1 teaspoon
  • Salt – ½ teaspoon
  • Black Pepper (freshly ground) – as per taste
  • Olive Oil – 2 tablespoons
  • Lemon – 1

Instructions

Step by step recipe is given below:

  1. In a bowl, combine cucumbers, avocados, tomatoes and red onions.
  2. Season with dried parsley, salt and freshly ground black pepper.
  3. Drizzle olive oil, squeeze lemon and mix them well.
