In a large mixing bowl, combine mangoes, tomatoes, cucumbers, bell peppers, avocados, red onions, jalapeños, and mint leaves.
Squeeze in the lemon juice.
Season with colored pepper, salt, red chili powder, cumin powder, oregano, and dried parsley.
Add a splash of vinegar and mix everything gently until well combined.
