Ingredients

  • 2 cups ripe mangoes (cubed)
  • 1 cup tomatoes (diced)
  • 1 cup cucumbers (diced)
  • 1 cup bell peppers (diced)
  • 1 cup avocados (diced)
  • ¼ cup red onions (chopped)
  • ¼ cup jalapeños (sliced)
  • ¼ cup mint leaves (chopped)
  • 1 lemon
  • freshly ground colored pepper (to taste)
  • ½ teaspoon salt
  • ¾ teaspoon red chili powder
  • ¾ teaspoon cumin powder
  • ¾ teaspoon oregano
  • 1 teaspoon dried parsley
  • vinegar (to taste)

Instructions

  • In a large mixing bowl, combine mangoes, tomatoes, cucumbers, bell peppers, avocados, red onions, jalapeños, and mint leaves.
  • Squeeze in the lemon juice.
  • Season with colored pepper, salt, red chili powder, cumin powder, oregano, and dried parsley.
  • Add a splash of vinegar and mix everything gently until well combined.
